Grilled Barbecue Shrimp

 3 sticks cold unsalted butter, cubed

 1/2 cup Worcestershire sauce

 Juice of 1 large fresh lemon

 2 tsps. freshly ground black pepper

 2 tsps. Creole seasoning

 1 tsp. minced garlic

 16 jumbo, peeled and deveined, shrimp (about 1 1/2 lbs.)

 Melt butter in a saucepan and add next 5 ingredients; mix well. Toss with shrimp and cook on an open grill for 15 to 20 minutes on heavy duty foil. Makes 2 entrees or 6 appetizer servings.

 Note: To add taste and body to shrimp, dissolve 2 tablespoons sea salt in a bowl of war water; add shrimp and 2 halved lemons, squeezing the juice from the lemons into the soaking shrimp. Cover with ice and let stand for 2 hours.

 Dad’s Favorite Hamburgers

 2 lbs. ground chuck or round

 2 Tbsps. Worcestershire

 1 tsp. each: lemon pepper & garlic powder

 1 raw egg, slightly beaten

 4 thin slices each: tomato, onion, cheddar cheese

 8 slices lean bacon

 4 jumbo hamburger buns

 Garnish: shredded lettuce, mustard, mayo

 Mix well first 5 ingredients; form into 8 thin patties that are uniform in size. On top of 4 patties, place 1 slice each of tomato, onion, cheese. Top each with remaining four patties, sealing edges well. Crisscross 2 slices bacon on each patty; secure with toothpicks. To cook: place on medium/hot grill and cook about 12-15 minutes on each side. Makes 4 large burgers.
Note: Hamburger meat and bacon will drip, causing coals to flare up. It’s a good idea to keep a spray bottle full of water handy to douse the flames.
